LCC Students Highlight Barako as Food Ingredient

Lipa City – While the Liberica Coffee aka Kapeng Barako has been the most popular drink among Lipeños, two students from Lipa City Colleges (LCC) used Kapeng Barako as an ingredient for a savory dish and sweet dessert. Their recipes were presented last October 27 at the LCC’s mock hotel.

20-year old Jelaiza Acapulco from Brgy Latag in Lipa City made a dessert called “Triple-layer Liberica Panna Cotta”.  The bottom layer of the panna cotta used ground paborita biscuits instead of the commonly used Graham crackers. 

The top most part is a Kapeng Barako flavored jelly.

Creamy Chicken Liberica served with mashed potatoes. The chicken meat is marinated with ground Kapeng Barako beans while the cream of the chicken is infused with Barako espresso.

Nineteen-year old Francesco Binalayo from Brgy. San Carlos in Lipa City created a dish called “Creamy Chicken Liberica with Mashed Potato”, where the chicken meat is marinated with ground Kapeng Barako beans while Barako espresso was used as part of the cream for the chicken. 

This event which aims to discover more usage of Kapeng Barako as a food ingredient is part of the 2017 Kapeng Barako Festival organized the Lipa Tourism Council.
